Green Bean Stuffing Casserole

Here’s a delicious recipe for Green Bean Stuffing Casserole that combines the best of both worlds—savory stuffing and tender green beans. Perfect for a holiday meal or a cozy dinner!

Ingredients:

  • 2 cups fresh green beans (or 1 can of green beans, drained)
  • 1 box of stuffing mix (any kind you prefer, such as cornbread or traditional)
  • 1/2 cup butter (1 stick)
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 cup chicken broth (or vegetable broth for a vegetarian version)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste
  • 1/2 cup French fried onions (for topping)

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the green beans: If you’re using fresh green beans, trim the ends and blanch them by boiling in salted water for 5–6 minutes until just tender. Drain and set aside. If using canned, just drain and rinse them.
  3. Prepare the stuffing: Follow the instructions on the stuffing box to prepare the stuffing. Typically, you’ll need to melt butter and mix it with water (and sometimes broth). Set the prepared stuffing aside.
  4. Cook the aromatics: In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3–4 minutes, until softened. Add the minced garlic and cook for an additional 30 seconds, until fragrant.
  5. Combine the ingredients: Stir in the chicken broth and sour cream into the skillet with the onions and garlic, and season with salt and pepper. Once heated through, add the cooked green beans and mix to coat them in the sauce.
  6. Assemble the casserole: In a greased 9×13-inch baking dish, spread the green bean mixture evenly. Top with the prepared stuffing, pressing it down gently.
  7. Bake the casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil, sprinkle the shredded cheese (if using) over the top, and bake for another 10–15 minutes, until bubbly and golden brown on top.
  8. Top with fried onions: In the last 5 minutes of baking, sprinkle the French fried onions over the top and bake until they’re crispy and golden.
  9. Serve and enjoy: Let the casserole cool for a few minutes before serving. It’s the perfect comforting side dish to any meal!
