Cantucci (Italian Almond Biscotti)

Cantucci (also known as Italian Almond Biscotti) are a wonderful treat, perfect for dipping in coffee or vin santo! Here’s a classic recipe you can try:

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole almonds, toasted and skins left on (you can also use blanched almonds if you prefer)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (optional, for more almond flavor)
  • Zest of 1 lemon (optional, for a fresh touch)
  • 1 egg (for egg wash, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
  3. Prepare the Dough: In a separate large mixing bowl, beat together the eggs, sugar, vanilla extract, almond extract (if using), and lemon zest until smooth. Add the dry ingredients to the wet ingredients and stir until combined.
  4. Add the Almonds: Fold the toasted almonds into the dough. The dough will be a bit sticky, but it should hold together. If it feels too wet, you can add a little more flour, a tablespoon at a time.
  5. Shape the Dough: Divide the dough into two equal parts. Lightly flour your hands, then shape each portion into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, spaced a little apart.
  6. Bake the First Time: Bake the logs in the preheated oven for about 25-30 minutes, or until they’re golden brown and firm to the touch.
  7. Slice and Second Bake: Let the logs cool for about 10 minutes, then transfer them to a cutting board. Using a serrated knife, slice the logs diagonally into about 1/2-inch thick slices. Lay the slices flat on the baking sheet.
  8. Bake Again: Return the slices to the oven and bake for an additional 10-15 minutes, turning them halfway through, until they are crisp and golden.
  9. Cool and Serve: Let the cantucci cool completely on a wire rack. They’ll become even crunchier as they cool.

Tips:

  • For extra flavor, you can dip the cooled biscotti in melted chocolate after baking.
  • Cantucci can be stored in an airtight container for several weeks, so they’re great for gifting too!
