A Chicken and Potato Bake is a simple, comforting one-pan dish that’s perfect for busy nights or a cozy family dinner. With tender chicken, crispy potatoes, and savory seasonings, this dish is sure to be a crowd-pleaser. Here’s a delicious recipe you can follow:

Chicken and Potato Bake

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts, if preferred)
  • 4 medium potatoes, cut into 1-inch cubes (Yukon gold or russet work well)
  • 2 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp fresh rosemary or 1 tsp dried rosemary (optional)
  • 1 lemon, sliced (optional, for added flavor)
  • 1/2 cup grated Parmesan cheese (optional, for topping)
  • Fresh parsley or thyme, for garnish (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

2. Prepare the Chicken:

  1. Season the Chicken: Pat the chicken thighs dry with paper towels. Season them generously with salt, pepper, garlic powder, thyme, and paprika. Drizzle with 1 tablespoon of olive oil and rub the seasonings into the skin.

3. Prepare the Potatoes:

  1. Season the Potatoes: In a large bowl, toss the cubed potatoes with the remaining tablespoon of olive oil, salt, pepper, garlic powder, and dried rosemary (if using). Make sure the potatoes are evenly coated.

4. Assemble the Dish:

  1. Arrange in a Baking Dish: In a large baking dish or sheet pan, spread the seasoned potatoes evenly on the bottom. Place the seasoned chicken thighs on top of the potatoes.
  2. Add Lemon (Optional): If using lemon, place a few slices of lemon around the chicken for extra flavor.

5. Bake the Chicken and Potatoes:

  1. Bake: Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden brown. If you prefer extra crispy skin, you can broil for an additional 2-3 minutes at the end.

6. Optional Parmesan Topping:

  • For a cheesy finish, sprinkle the grated Parmesan over the chicken and potatoes during the last 10 minutes of baking.

7. Serve:

  • Once baked, remove the dish from the oven and let it rest for a few minutes. Garnish with fresh parsley or thyme if desired. Serve hot and enjoy your comforting meal!

Optional Add-ins and Variations:

  • Vegetables: Feel free to add other vegetables like carrots, bell peppers, or green beans to the bake for extra flavor and nutrients.
  • Herb Variations: Swap out rosemary for other fresh herbs like oregano or basil for different flavor profiles.
  • Creamy Version: For a creamy twist, add a few dollops of sour cream or cream cheese to the potatoes before baking.

This Chicken and Potato Bake is the ultimate comfort food—easy to make, hearty, and full of flavor. Enjoy!
