Ingredients:

  • 1 cup peanut butter (creamy or chunky, depending on your preference)
  • 1 cup sugar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • A pinch of salt (optional, especially if using unsalted peanut butter)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

2. Mix the Ingredients:

  • In a medium bowl, combine the peanut butter, sugar, egg, baking soda, and salt (if using).
  • Stir everything together until well combined. The dough should be thick and sticky.

3. Form the Cookies:

  • Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  • Using a fork, press each ball down gently in a criss-cross pattern, pressing lightly to flatten the cookies.

4. Bake:

  • Bake in the preheated oven for about 8-10 minutes, or until the edges are lightly golden.
  • Keep an eye on them so they don’t overbake, as they can get a bit dry if left too long.

5. Cool and Serve:

  • Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

These cookies are incredibly simple, but the peanut butter flavor shines through beautifully. They have a slightly crumbly texture and are wonderfully soft on the inside with just the right amount of sweetness.
