Easy Dumpling Soup

Here’s an easy recipe for dumpling soup that you can try!

Ingredients:

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup milk
  • 1/4 cup melted butter or oil

For the Soup:

  • 4 cups chicken broth (or vegetable broth)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme (or fresh if you have it)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Make the Dumplings:
    • In a bowl, whisk together flour, baking powder, salt, and garlic powder.
    • Add milk and melted butter, stirring until just combined. You want the dough to be thick but still slightly sticky.
    • Set the dough aside while you make the soup.
  2. Prepare the Soup:
    • Heat olive oil in a large pot over medium heat. Add the chopped onion, and sauté for about 2 minutes until softened.
    • Add the carrots and celery, and cook for another 3-4 minutes.
    • Pour in the chicken broth and bring the soup to a simmer. Add thyme, salt, and pepper to taste.
    • Once the soup is simmering, drop spoonfuls of the dumpling dough into the soup. They will puff up as they cook.
    • Cover the pot and let the dumplings cook for about 15-20 minutes. They should be cooked through and fluffy.
  3. Serve:
    • Taste the soup, and adjust seasoning with more salt and pepper if needed.
    • Ladle the soup into bowls, making sure to include a few dumplings in each bowl.
    • Garnish with fresh parsley if desired.

Tips:

  • You can add some spinach or kale to the soup for extra veggies.
  • For a heartier version, try adding shredded rotisserie chicken.
