Ingredients:

  • 4 large eggs
  • 2 ½ cups whole milk

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 1-quart or 8×8-inch baking dish with butter or cooking spray.
  2. Prepare the custard mixture: In a large mixing bowl, whisk together the eggs, sugar, salt, and vanilla extract until well combined.
  3. Heat the milk: In a medium saucepan, heat the milk over medium heat just until it begins to steam—do not bring it to a boil. You want it hot but not boiling, to prevent the eggs from curdling when mixed.
  4. Combine the milk and egg mixture: Gradually add the hot milk to the egg mixture, a little at a time, whisking constantly to temper the eggs and prevent them from scrambling. Once the milk is fully incorporated, pour the custard mixture back into the saucepan.
  5. Cook the custard: Return the custard mixture to the saucepan and cook over medium heat, stirring constantly, for about 5-7 minutes, until the custard thickens slightly (it should coat the back of a spoon). Do not let it boil.
  6. Pour into the baking dish: Pour the custard mixture into the prepared baking dish.
  7. Bake: Sprinkle the top with ground nutmeg if desired, then bake for 40-45 minutes, or until a knife inserted into the center comes out clean. The custard should be set and lightly browned on top.
  8. Cool and serve: Allow the custard to cool for a few minutes before serving. It can be enjoyed warm or chilled, depending on your preference.

Tips:

  • Texture: If you prefer a smoother custard, you can strain the mixture through a fine sieve before pouring it into the baking dish to remove any egg bits.
