Steak and eggs is a classic breakfast or brunch dish that’s hearty, satisfying, and full of flavor. When done right, it’s the perfect combination of tender steak and rich eggs. Here’s a simple, yet delicious recipe for steak and eggs:

Ingredients:

  • 2 ribeye steaks (or your preferred cut of steak, such as sirloin or flank)
  • Salt and freshly ground black pepper (to taste)
  • 1 tbsp olive oil (or butter)
  • 2 tbsp unsalted butter (for basting the steak)
  • 4 large eggs
  • 2 cloves garlic, smashed (optional)
  • 2 sprigs fresh thyme or rosemary (optional)
  • 1 tbsp parsley, chopped (for garnish)
  • Hot sauce (optional, for serving)

Instructions:

For the Steak:

  1. Prep the steaks: Take the steaks out of the fridge about 20-30 minutes before cooking to allow them to come to room temperature. Pat them dry with paper towels, then season generously with salt and pepper on both sides.
  2. Heat the pan: In a large skillet (preferably cast iron), heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot and shimmering, add the steaks.
  3. Cook the steaks:
    • For a medium-rare steak, cook the steaks for about 4-5 minutes per side, depending on thickness.
    • After flipping the steak, add the butter, smashed garlic, and fresh thyme/rosemary (if using) to the pan. Spoon the melted butter over the steaks for extra flavor.
    • Adjust the cooking time based on your preferred level of doneness:
      • Rare: 3-4 minutes per side
      • Medium-rare: 4-5 minutes per side
      • Medium: 5-6 minutes per side
      • Well-done: 6-7 minutes per side
  4. Rest the steak: Once the steaks are cooked to your liking, remove them from the skillet and let them rest on a plate, loosely covered with foil, for 5-10 minutes. This helps the juices redistribute and keeps the steak tender.

For the Eggs:

  1. Cook the eggs: While the steak is resting, heat a non-stick skillet over medium-low heat. Add a little butter or oil to the pan.
  2. Fry the eggs: Crack the eggs into the skillet and cook them to your desired level of doneness:
    • Sunny-side-up: Cook for about 2-3 minutes, until the whites are set, but the yolk is still runny.
    • Over-easy: Cook for 2 minutes, then flip and cook for another 1-2 minutes, keeping the yolk soft.
    • Over-medium: Flip and cook for about 2-3 minutes, until the yolk is slightly set but still runny.
    • Over-hard: Flip and cook for 3-4 minutes, until the yolk is fully cooked.
  3. Season: Season the eggs with salt and pepper to taste.

Assemble the dish:

  1. Plate it: Slice the rested steak against the grain and place it on a plate. Add the eggs on top or beside the steak.
  2. Garnish: Sprinkle with chopped parsley for a burst of color and freshness. Optionally, drizzle with hot sauce if you like a bit of spice.

Tips:

  • Steak choice: Ribeye, New York strip, or sirloin are all great choices for steak and eggs. Ribeye offers the most flavor due to its marbling.
  • Doneness: Use a meat thermometer if you want precise doneness:
    • Rare: 125°F
    • Medium-rare: 130-135°F
    • Medium: 140-145°F
    • Medium-well: 150-155°F
    • Well-done: 160°F+
  • Serving suggestions: Pair with crispy hash browns, sautéed spinach, or roasted tomatoes for a more complete meal.
