Here’s a delicious and easy recipe for Chicken Bubble Biscuit Bake Casserole—a comforting, cheesy casserole with tender chicken, fluffy biscuit bubbles, and a creamy sauce!

Ingredients:

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)
  • 1 (10.5 oz) can of cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup frozen peas (optional)
  • 1 tablespoon butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme (optional)
  • Salt and pepper to taste
  • 1 (7.5 oz) can of refrigerated biscuit dough (like Pillsbury Grands!)

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease or spray a 9×13-inch baking dish with cooking spray.

2. Prepare the Chicken Mixture:

  • In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, frozen peas (if using), garlic powder, onion powder, thyme, salt, and pepper. Stir until well combined.

3. Assemble the Casserole:

  • Pour the chicken mixture into the prepared baking dish and spread it out evenly.

4. Prepare the Biscuits:

  • Open the biscuit dough and cut each biscuit into 4 pieces (you’ll have about 16 pieces total). Arrange the biscuit pieces on top of the chicken mixture. It’s okay if they overlap slightly, as they will puff up while baking.

5. Top with Cheese and Butter:

  • Drizzle the melted butter over the biscuit pieces to help them get golden and crispy.
  • Sprinkle the top with extra shredded cheddar cheese.

6. Bake:

  • Bake in the preheated oven for 30-40 minutes, or until the biscuits are golden brown, the cheese is melted, and the chicken mixture is bubbly.
  • If the biscuits start browning too quickly, cover the casserole loosely with foil and continue baking until fully cooked.

7. Serve:

  • Let the casserole cool for a few minutes before serving. Scoop and serve hot!

Tips:

  • Vegetables: You can add other vegetables like carrots, corn, or mushrooms to the chicken mixture for extra flavor and nutrition.
  • Make it creamy: If you prefer a creamier texture, you can add a little more sour cream or even some heavy cream.
  • Leftovers: This casserole makes great leftovers! Store in an airtight container in the fridge for up to 3 days.
