Homemade Mexican Pizza

Here’s a tasty and easy recipe for Homemade Mexican Pizza that’s full of flavor and can be made quickly for a fun dinner or a party treat!

Ingredients:

For the Pizza Base:

  • 2 flour tortillas (8-10 inches in size)
  • 2 tablespoons olive oil (for brushing)

For the Ground Beef Mixture:

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, finely chopped
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/2 cup water (or beef broth for more flavor)

For the Toppings:

  • 1 cup refried beans (can be homemade or canned)
  • 1 1/2 cups shredded Mexican cheese blend (or cheddar and Monterey Jack cheese)
  • 1 medium tomato, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup black olives, sliced (optional)
  • 1/2 cup shredded lettuce (optional)
  • Salsa or sour cream for serving (optional)

Instructions:

1. Prepare the Beef Mixture:

  • In a skillet, cook the ground beef over medium heat until it starts to brown (about 5-7 minutes). Use a spoon to break it up into small pieces as it cooks.
  • Add the chopped onion and cook until softened, about 3 minutes.
  • Stir in the taco seasoning and water (or beef broth). Cook for another 2-3 minutes, stirring occasionally until the mixture thickens slightly. Set aside.

2. Prepare the Tortillas:

  • Preheat your oven to 400°F (200°C).
  • Brush one side of each tortilla with olive oil, then place them on a baking sheet, oiled side up.
  • Bake the tortillas for about 5-7 minutes, or until they’re lightly golden and crispy. Remove from the oven and set aside.

3. Assemble the Pizza:

  • Spread a layer of refried beans over the top of one of the crispy tortillas.
  • Evenly distribute the cooked ground beef mixture on top of the beans.
  • Sprinkle the shredded cheese evenly over the top.

4. Top with Second Tortilla:

  • Place the second tortilla on top of the cheese layer, pressing it down lightly. Brush the top of the tortilla with a little more olive oil.

5. Bake the Mexican Pizza:

  • Return the assembled pizza to the oven and bake for another 5-7 minutes, or until the cheese is melted and the top tortilla is crispy and golden.

6. Add Final Toppings:

  • Once the pizza is out of the oven, top it with chopped tomatoes, green onions, black olives (if using), and shredded lettuce.
  • Optionally, drizzle with salsa or serve with sour cream on the side.

7. Slice and Serve:

  • Slice the Mexican pizza into wedges and serve immediately. Enjoy with extra salsa or guacamole for dipping!

Tips:

  • For a spicier version, you can add jalapeños or chili peppers to the beef mixture or on top of the pizza.
  • You can customize the toppings to your liking by adding ingredients like avocado, cilantro, or even a squeeze of lime.
