Stuffed Pepper Soup

Stuffed Pepper Soup is a hearty and flavorful dish that’s essentially like having the filling of stuffed peppers in soup form! It’s a great way to enjoy the classic flavors in a cozy, comforting bowl. Here’s a simple recipe for making it:

Ingredients:

  • 1 lb ground beef (or turkey for a lighter version)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth (or vegetable broth for a lighter taste)
  • 1 cup cooked rice (white or brown)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a little heat)
  • Fresh parsley or cilantro (optional, for garnish)

Instructions:

  1. Brown the ground meat: In a large pot, heat some oil over medium heat. Add the ground beef (or turkey) and cook until browned. Break it up into small pieces as it cooks. Once done, drain any excess fat.
  2. Sauté vegetables: Add the chopped onion, garlic, and bell peppers to the pot. Cook for about 5-7 minutes until the veggies start to soften.
  3. Add liquids and seasonings: Stir in the diced tomatoes (with juices), tomato sauce, and beef broth. Add the oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  4. Simmer: Let the soup simmer for about 20-30 minutes so the flavors meld together.
  5. Add rice: Stir in the cooked rice and cook for another 5-10 minutes, just until everything is heated through.
  6. Adjust seasoning: Taste the soup and add more salt, pepper, or any additional seasonings to your liking. If you want a little heat, add some red pepper flakes.
  7. Serve: Ladle the soup into bowls and garnish with fresh parsley or cilantro if desired. Enjoy!

This soup is a complete meal with protein, veggies, and carbs all in one bowl. You can also customize it by adding other veggies like zucchini or corn, or even use quinoa or cauliflower rice for a different twist!
