For the Sandwich:

  • 4 slices thick white or sourdough bread

  • 1 cup cooked breaded chicken (store-bought chicken cutlets, chicken tenders, or leftovers)

  • 4 slices mozzarella cheese

  • 2–4 tbsp marinara sauce

  • 2 tbsp grated Parmesan cheese

  • 2 tbsp butter, softened

  • Optional: fresh basil leaves or Italian seasoning

For Extra Crispiness (Optional but Recommended):

  • 2 tbsp grated Parmesan + 1/2 tsp garlic powder mixed into butter for spreading on the outside

1. Prep the Chicken

  • If using leftover or frozen breaded chicken, heat it up in the oven or air fryer until crispy and hot.

  • Slice into sandwich-sized pieces if needed.


2. Build the Sandwiches

  1. Spread butter on one side of each bread slice. (Mix in Parmesan and garlic powder for extra flavor.)

  2. On the unbuttered side of two slices:

    • Add 1 slice mozzarella

    • Layer in chicken

    • Spoon over marinara sauce (don’t overload β€” you want it gooey, not soggy)

    • Sprinkle a bit of grated Parmesan

    • Add basil if using

    • Top with another slice of mozzarella

  3. Close the sandwiches with remaining bread, buttered side out.


3. Grill the Sandwiches

  • Grill sandwiches buttered-side down, pressing gently with a spatula.

  • Cook for 3–4 minutes per side, or until golden brown and the cheese is fully melted.

  • Flip carefully so the filling doesn’t spill out.

  • Let cool slightly, then slice in half.

  • Serve with extra warm marinara for dipping if desired.
