Buttery Shortbread Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt (if using unsalted butter)
  • Optional: 1/4 teaspoon almond extract (for added flavor)
  • Optional: Granulated sugar for sprinkling (for extra sweetness on top)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Mix the dough:
    In a large bowl, cream the softened butter with the powdered sugar and granulated sugar until light and fluffy (about 3-4 minutes). This will help incorporate air into the dough and make the cookies tender.
  3. Add vanilla (and almond, if using):
    Stir in the vanilla extract and almond extract (if you like that extra touch of flavor).
  4. Incorporate the dry ingredients:
    Gradually add the flour and salt, mixing just until combined. Don’t overwork the dough to ensure the cookies stay light and crumbly.
  5. Shape the cookies:
    Roll the dough into a log or press it into a flat disk, then wrap it in plastic wrap and refrigerate for about 30 minutes (optional, but it helps prevent the dough from spreading too much). You can also roll the dough out and cut it into shapes using cookie cutters for a festive touch.
  6. Bake the cookies:
    Once chilled, cut the dough into desired shapes or slice the log into rounds. Place the cookies on the prepared baking sheet and sprinkle lightly with granulated sugar (if desired).

    Bake for 10-12 minutes, or until the edges of the cookies are lightly golden brown.

  7. Cool and enjoy:
    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
