📝 Ingredients:

1 ½ to 2 lbs boneless, skinless chicken breasts (or thighs)

3 bell peppers, sliced (use a mix of red, yellow, green)

1 medium onion, sliced

1 can (14.5 oz) diced tomatoes (drained) or 1/2 cup salsa

2 tsp chili powder

1 tsp cumin

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

Juice of 1 lime (or 1–2 tbsp)
