Kale and white bean soup

Here’s a hearty, healthy, and comforting Kale and White Bean Soup — packed with tender kale, creamy white beans, and flavorful broth. Perfect for a cozy meal any day!


🥣🥬 Kale and White Bean Soup

📝 Ingredients:

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed

  • 1 bunch kale, stems removed and leaves chopped (about 4 cups)

  • 1 large carrot, diced

  • 1 tsp dried thyme or rosemary

  • 1/2 tsp crushed red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Juice of 1/2 lemon (optional, for brightness)

  • Optional: grated Parmesan or crusty bread for serving


🥣 Instructions:

1. Sauté Aromatics:

  • Heat olive oil in a large pot over medium heat.

  • Add onion and carrot, cook until softened (about 5 minutes).

  • Stir in garlic and cook 1 more minute until fragrant.


2. Add Broth and Beans:

  • Pour in broth, then add white beans and thyme.

  • Bring to a gentle boil, then reduce heat and simmer for 10 minutes.


3. Add Kale:

  • Stir in chopped kale.

  • Simmer for another 5-7 minutes until kale is tender but still bright green.


4. Season and Finish:

  • Add salt, pepper, and red pepper flakes to taste.

  • Stir in lemon juice if using for a fresh zing.


🍽️ Serving Suggestions:

  • Serve hot, topped with grated Parmesan and a drizzle of good olive oil.

  • Pair with crusty bread or garlic toast.

  • Add diced potatoes or zucchini for more veggies.

  • Use smoked sausage or ham for a meaty twist.

  • Blend part of the soup for a creamier texture without cream.
