Got it! Here’s a hearty, chewy, and loaded cookie recipe — Cowboy Cookies. They’re packed with oats, chocolate chips, nuts, and sometimes coconut, making them the ultimate “ride-off-into-the-sunset” snack!


🤠🍪 Cowboy Cookies

📝 Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup packed brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3 cups old-fashioned rolled oats

  • 1 cup semi-sweet chocolate chips

  • 1 cup chopped pecans or walnuts

  • 1 cup sweetened shredded coconut (optional)


🥣 Instructions:

1. Preheat Oven:

  • Preheat oven to 350°F (175°C).

  • Line baking sheets with parchment paper.


2. Mix Wet Ingredients:

  • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in eggs one at a time, then stir in vanilla.


3. Combine Dry Ingredients:

  • In another bowl, whisk together flour, baking soda, and salt.

  • Gradually add dry ingredients to wet mixture, mixing until just combined.


4. Add Oats, Chocolate, Nuts, and Coconut:

  • Stir in oats, chocolate chips, nuts, and coconut (if using) until evenly distributed.


5. Bake:

  • Drop dough by rounded tablespoonfuls onto prepared baking sheets.

  • Bake 10–12 minutes or until edges are golden but centers still look slightly soft.

  • Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.


🍽️ Tips:

  • Store in an airtight container at room temperature for up to a week.

  • For a softer cookie, slightly underbake and let cool.

  • Swap nuts for your favorite mix-ins like dried cranberries or M&Ms.
