Fluffy Condensed Milk Bread

Here’s a soft, slightly sweet, and ultra-fluffy Condensed Milk Bread recipe — perfect for breakfast, tea time, or just enjoying warm with butter!


🍞 Fluffy Condensed Milk Bread (Japanese-style Milk Bread)

🥛 Ingredients:

For the Dough:

  • 2 ½ cups (320g) bread flour (or all-purpose, but bread flour gives better structure)

  • 2 ¼ tsp active dry yeast (or 1 packet)

  • 3 tbsp granulated sugar

  • ½ tsp salt

  • ½ cup (120ml) warm milk (about 100–110°F / 38–43°C)

  • 1 large egg, room temperature

  • ¼ cup (80g) sweetened condensed milk

  • 3 tbsp (45g) unsalted butter, softened

For the Topping (Optional):

  • 1 tbsp milk + 1 tbsp condensed milk (for brushing before/after baking)

  • Softened butter (for brushing after baking)


🥣 Instructions:

1. Activate the Yeast:

  • In a small bowl, mix warm milk with yeast and a pinch of sugar. Let sit for 5–10 minutes until foamy.

2. Make the Dough:

  • In a large bowl (or stand mixer), combine flour, sugar, and salt.

  • Add in the yeast mixture, egg, and condensed milk.

  • Mix until a shaggy dough forms, then knead by hand or with a dough hook for 8–10 minutes.

  • Add softened butter, a little at a time, and continue kneading until the dough is smooth, elastic, and slightly tacky (another 5–8 minutes). It should pass the “windowpane test”.

3. First Rise:

  • Place dough in a lightly greased bowl, cover with plastic wrap or a towel, and let rise in a warm place until doubled in size — about 1–1.5 hours.

4. Shape the Dough:

  • Punch down dough and divide into 3 or 4 equal portions.

  • Roll each piece into a ball, then flatten and roll into an oval shape. Roll up each oval (like a cinnamon roll without filling), seam side down.

  • Place in a greased loaf pan or round cake pan, spaced evenly.

5. Second Rise:

  • Cover and let rise again until puffed and touching — about 45 minutes to 1 hour.

6. Bake:

  • Preheat oven to 350°F (175°C).

  • (Optional) Brush with milk + condensed milk mixture for shine and sweetness.

  • Bake for 25–30 minutes, or until golden brown on top and hollow-sounding when tapped.

7. Finishing Touch:

  • Brush with softened butter or more condensed milk glaze while still warm for extra flavor and shine.


🧈 Serving Ideas:

  • Serve warm with butter, jam, or extra condensed milk.

  • Makes excellent French toast or bread pudding if slightly stale.


🥶 Storage:

  • Keeps soft for 2–3 days in an airtight container.

  • You can freeze slices and toast when needed.
