Fluffy Mini Pancakes

Fluffy Mini Pancakes (also known as silver dollar pancakes) are light, airy, and super cute—perfect for breakfast, brunch, or even fun snacks. They’re kid-friendly, freezer-friendly, and easy to make from scratch!


🥞 Fluffy Mini Pancakes Recipe

📝 Ingredients (Makes ~40 mini pancakes):

  • 1 1/2 cups all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar/lemon juice)

  • 1/2 cup milk (any kind)

  • 1 large egg

  • 2 tbsp melted butter (plus more for cooking)

  • 1 tsp vanilla extract


🔥 Instructions:

1. Mix Dry Ingredients:

In a medium bowl, whisk together:

  • Flour

  • Sugar

  • Baking powder

  • Baking soda

  • Salt

2. Mix Wet Ingredients:

In another bowl, whisk:

  • Buttermilk

  • Milk

  • Egg

  • Melted butter

  • Vanilla

3. Combine:

  • Pour the wet ingredients into the dry ingredients.

  • Stir just until combined — a few lumps are okay. Don’t overmix.

4. Preheat & Grease Pan:

  • Heat a nonstick skillet or griddle over medium heat.

  • Lightly grease with butter or cooking spray.

5. Cook Mini Pancakes:

  • Drop batter by heaping teaspoons or 1-tablespoon scoops onto the pan.

  • Cook 1–2 minutes until bubbles form and edges look set.

  • Flip and cook 1–2 more minutes until golden and cooked through.

🔁 Repeat in batches as needed.


🍓 Serving Ideas:

  • Classic: With syrup, butter, and powdered sugar

  • Fun: Stack them on skewers with fruit (mini pancake kabobs!)

  • Dippable: Serve with Nutella, yogurt, or peanut butter

  • Brunch board: Pair with bacon, berries, and whipped cream


🥡 Storage:

  • Fridge: Store in airtight container up to 3 days

  • Freezer: Freeze in a single layer, then transfer to a bag (lasts up to 2 months)

  • Reheat: Microwave in 10-second bursts or warm in toaster oven
