CROCK POT PEPPER STEAK

Here’s a flavorful, tender, and ultra-easy Crock Pot Pepper Steak recipe — a takeout-style favorite made right in your slow cooker with minimal effort and maximum flavor!


🥩 Crock Pot Pepper Steak

📝 Ingredients:

  • 1.5 to 2 lbs sirloin steak, flank steak, or round steak, sliced into thin strips

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 2 cloves garlic, minced

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1/4 cup low-sodium soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp cornstarch

  • 1/2 cup beef broth

  • 1 tbsp Worcestershire sauce (optional, for extra depth)

  • 1 tsp ground ginger or fresh grated (optional)

  • 1/2 tsp black pepper

  • Cooked white rice, brown rice, or noodles for serving


🔥 Instructions:

1. Prepare the Beef:

  • Slice steak into thin strips (against the grain for tenderness).

  • Optional: Lightly sear the beef in a skillet with oil for 1–2 minutes per side for extra flavor (not required but recommended).

2. Assemble in Crock Pot:

  • Add sliced steak, diced tomatoes (with juice), soy sauce, brown sugar, garlic, ginger (if using), Worcestershire sauce, and black pepper to the slow cooker.

  • Stir to combine.

3. Cook:

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

4. Add Peppers & Onion:

  • About 1 hour before serving, stir in the sliced bell peppers and onions.

  • (This prevents them from getting mushy.)

5. Thicken the Sauce (Optional):

  • In the last 30 minutes of cooking, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the crockpot to thicken the sauce.


🍽️ Serving Ideas:

  • Serve hot over:

    • Steamed white or brown rice

    • Cauliflower rice (for a low-carb option)

    • Lo mein noodles or even mashed potatoes


🥡 Storage:

  • Fridge: Keeps 3–4 days in an airtight container.

  • Freezer: Freeze cooked and cooled pepper steak (without rice) for up to 2 months. Thaw and reheat on the stovetop.


🔄 Variations:

  • Spicy kick: Add red pepper flakes or sriracha.

  • Sweet & savory: Add pineapple chunks near the end of cooking.

  • Low-sodium: Use low-sodium soy sauce and no added salt.
