Crispy Roasted Cauliflower recipe

Posted on January 14, 2025

Here’s a simple and delicious recipe for crispy roasted cauliflower that’s full of flavor and perfect as a side dish or snack!

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin (optional, for extra flavor)
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese (optional, for extra crispiness)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.

2. Prepare the Cauliflower:

  • Wash and cut the cauliflower into bite-sized florets. Try to make them roughly the same size so they cook evenly.
  • Dry the florets well with a kitchen towel. Removing excess moisture is key to getting them crispy.

3. Season the Cauliflower:

  • In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, onion powder, cumin (if using), salt, and pepper. Make sure the florets are evenly coated.

4. Roast the Cauliflower:

  • Spread the seasoned cauliflower evenly on the prepared baking sheet in a single layer. Ensure that the florets aren’t crowded—this will help them crisp up properly.
  • Roast in the preheated oven for 25-30 minutes, flipping the florets halfway through. The cauliflower should be golden brown and crispy on the edges.

5. Optional Parmesan Finish:

  • If you want an extra crispy and cheesy finish, sprinkle freshly grated Parmesan cheese over the cauliflower during the last 5 minutes of roasting. It will melt and form a crispy coating.

6. Serve:

  • Remove from the oven and transfer to a serving dish.
  • Garnish with freshly chopped parsley, if desired.
  • Serve hot and enjoy!

Tips for Extra Crispiness:

  • Cut the cauliflower into smaller florets for a crispier texture. The more surface area, the crispier the cauliflower will be.
  • Don’t overcrowd the baking sheet. If needed, use two baking sheets to give the cauliflower room to roast properly.
  • Preheat the baking sheet: For even more crispiness, place the baking sheet in the oven while it preheats, and then add the cauliflower once the oven is ready.

This crispy roasted cauliflower is a tasty, healthy, and easy-to-make dish that can be served as a side or enjoyed as a snack!
