Snowball Cookies

Snowball Cookies (also known as Russian Tea Cakes or Mexican Wedding Cookies) are buttery, nutty, and melt-in-your-mouth treats coated in powdered sugar—perfect for holidays or any time you want a cozy dessert.

Here’s a classic recipe:


❄️ Snowball Cookies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • ½ cup powdered sugar (plus more for rolling)

  • 1 teaspoon vanilla extract

  • 2 ¼ cups all-purpose flour

  • ¼ teaspoon salt

  • ¾ cup finely chopped nuts (typically pecans or walnuts)


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, cream the butter and powdered sugar until light and fluffy.

  3. Add vanilla extract and mix well.

  4. Gradually stir in flour and salt until combined.

  5. Fold in the chopped nuts.

  6. Roll dough into 1-inch balls and place on the prepared baking sheet (spacing them about 1 inch apart—they don’t spread much).

  7. Bake for 12–15 minutes, or until the bottoms are lightly golden (tops will still look pale).

  8. Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.

  9. Once completely cooled, roll them in powdered sugar again for the perfect snowy finish.


📝 Tips:

  • You can toast the nuts beforehand for deeper flavor.

  • Dough can be made ahead and chilled or frozen.

  • Store in an airtight container for up to 1 week.
