Italian Chicken Rice Casserole

Absolutely! 🇮🇹🍗 Italian Chicken Rice Casserole is a creamy, cheesy, one-dish wonder loaded with tender chicken, seasoned rice, Italian herbs, and melty cheese. It’s cozy, comforting, and perfect for weeknight dinners or potlucks — with easy prep and minimal cleanup.

🛒 Ingredients

  • 2 cups cooked chicken (shredded or diced)
    (rotisserie chicken works great!)

  • 1 cup uncooked white rice (or brown rice — see notes)

  • 2 ½ cups chicken broth

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1 cup sour cream or plain Greek yogurt

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper to taste

  • 1 cup frozen spinach, thawed and drained (optional)

  • 1 cup cherry tomatoes, halved (optional, for topping)


👨‍🍳 Instructions

1. Preheat Oven

  • Preheat to 350°F (175°C).

  • Lightly grease a 9×13” baking dish.

2. Mix Ingredients

  • In a large bowl, combine:

    • Uncooked rice

    • Chicken broth

    • Cream of soup

    • Sour cream

    • Garlic powder, onion powder, Italian seasoning

    • Half of the mozzarella and all of the Parmesan

    • Salt & pepper to taste

  • Stir in cooked chicken and spinach (if using).

3. Assemble

  • Pour the mixture into the greased baking dish.

  • Spread evenly and cover tightly with foil.

4. Bake

  • Bake covered for 50–55 minutes, until rice is tender.

  • Remove foil, sprinkle remaining mozzarella and cherry tomatoes on top.

  • Bake uncovered for 10–15 minutes until cheese is melted and bubbly.

5. Rest & Serve

  • Let sit for 5–10 minutes before serving to firm up.


🍽️ Optional Add-Ins:

  • Sautéed mushrooms or bell peppers

  • Chopped sun-dried tomatoes

  • Italian sausage or pancetta instead of chicken


🧊 Storage:

  • Refrigerates well for up to 4 days

  • Freezes great after baking — reheat covered at 350°F until hot


💡 Tips:

  • Brown rice? Increase broth to 3 cups and bake covered for 1 hr 15 min.

  • Want more flavor? Use Italian-style rotisserie chicken and a splash of white wine in the broth.

  • Add a sprinkle of fresh basil or parsley for a fresh finish.
