🛒 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs

  • Salt & pepper, to taste

  • 1 tsp garlic powder

  • 1 tsp paprika (optional)

  • 2 tbsp olive oil or butter

For the Toppings:

  • 4 slices bacon, chopped

  • 8 oz (225g) mushrooms, sliced (white or cremini)

  • 3 cups fresh spinach (or 1 cup frozen, squeezed dry)

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ cup shredded mozzarella or Gruyère (optional for extra meltiness)

  • Red pepper flakes (optional)


👨‍🍳 Instructions

1. Season & Cook Chicken

  • Pat chicken dry and season both sides with salt, pepper, garlic powder, and paprika.

  • Heat olive oil in a large skillet over medium heat.

  • Sear chicken 4–5 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove and set aside.

2. Cook Bacon & Veggies

  • In the same skillet, cook chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon fat in the pan.

  • Add mushrooms to the pan and sauté 4–5 minutes until browned.

  • Add garlic and spinach, cooking until spinach is wilted (2–3 minutes).

3. Make the Cream Sauce

  • Reduce heat to low. Pour in heavy cream and stir in Parmesan cheese.

  • Let simmer 2–3 minutes to thicken slightly.

  • Season with salt, pepper, and red pepper flakes if using.

4. Bring It All Together

  • Return chicken and bacon to the skillet.

  • Spoon the creamy spinach-mushroom sauce over the chicken.

  • Sprinkle with mozzarella or Gruyère (optional), cover, and simmer on low for 5–7 minutes until everything is hot and melty.

  • Over mashed potatoes, rice, or pasta

  • With roasted vegetables or cauliflower mash for a low-carb option

  • With crusty bread to soak up that sauce!
