Sure! Enchiladas are a classic Mexican dish featuring rolled tortillas filled with various ingredients, covered in sauce, and baked until bubbly and delicious. They can be made with chicken, beef, cheese, veggies, or a mix. Here’s a simple, versatile basic enchilada recipe you can customize as you like:


🌮 Classic Cheese & Chicken Enchiladas

Ingredients:

  • 10-12 corn or flour tortillas (6-inch)

  • 3 cups cooked shredded chicken (optional, for chicken enchiladas)

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 cups enchilada sauce (red or green, homemade or store-bought)

  • 1 tbsp vegetable oil

  • Fresh cilantro for garnish (optional)

  • Sour cream or crema for serving (optional)


Instructions:

  1. Preheat oven: 375°F (190°C).

  2. Prepare the filling:
    In a bowl, mix shredded chicken, half the cheese, onion, and garlic.

  3. Warm tortillas:
    Heat tortillas on a dry skillet or in the microwave wrapped in a damp towel until soft and pliable.

  4. Fill tortillas:
    Spoon about ¼ cup filling onto each tortilla, roll tightly, and place seam-side down in a greased 9×13” baking dish.

  5. Top with sauce & cheese:
    Pour enchilada sauce evenly over rolled tortillas. Sprinkle with remaining cheese.

  6. Bake:
    Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until cheese is melted and bubbly.

  7. Serve:
    Garnish with cilantro, sour cream, or avocado slices.


Tips:

  • Customize fillings: add beans, veggies, beef, or shrimp.

  • Use homemade enchilada sauce for extra flavor.

  • Try green chile sauce or mole sauce for variations.
