🍗 Creamy Garlic Butter Chicken & Linguine Alfredo

🧺 Ingredients (Serves 4)

For the Chicken:

  • 2 large boneless skinless chicken breasts (or 4 cutlets)

  • Salt & pepper, to taste

  • 1 tsp garlic powder

  • ½ tsp paprika

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • Optional: ¼ cup white wine or chicken broth (for deglazing)

For the Alfredo Sauce:

  • 3 tbsp butter

  • 3 cloves garlic, minced

  • 1 ½ cups heavy cream (or half-and-half)

  • 1 ¼ cups grated Parmesan cheese (freshly grated melts best)

  • Salt & pepper, to taste

  • Pinch of nutmeg (optional, traditional)

  • Optional: ¼ cup reserved pasta water (to loosen sauce)

Pasta:

  • 12 oz linguine

  • Salt (for boiling water)

👩‍🍳 Instructions

1. Cook the Linguine

  • Bring a large pot of salted water to a boil.

  • Cook linguine until al dente according to package instructions.

  • Reserve ¼ cup pasta water, then drain and set aside.

2. Prepare the Chicken

  1. Pat chicken dry. Season both sides with salt, pepper, garlic powder, and paprika.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add chicken and sear 4–5 minutes per side until golden and cooked through (165°F/74°C internal temp).

  4. Remove chicken and set aside to rest. Slice before serving.

3. Make the Garlic Butter Base

  • In the same pan, reduce heat to medium-low.

  • Add 2 tbsp butter and the minced garlic.

  • Sauté until fragrant, ~1 minute.

  • Optional: splash in white wine or broth to deglaze and simmer until mostly evaporated.

4. Make the Alfredo Sauce

  1. In a saucepan (or same pan, if large enough), melt 3 tbsp butter.

  2. Add 3 cloves minced garlic and sauté briefly.

  3. Pour in heavy cream. Simmer gently 3–5 minutes (don’t boil).

  4. Stir in Parmesan cheese gradually, whisking until smooth.

  5. Season with salt, pepper, and nutmeg (if using).

  6. If too thick, stir in a splash of reserved pasta water.

5. Combine Everything

  • Toss the cooked linguine in the Alfredo sauce.

  • Add sliced garlic butter chicken on top.

  • Spoon any remaining pan juices from the chicken over the top.

🍽️ Serve With:

  • Chopped parsley or basil for garnish

  • Extra Parmesan

  • Garlic bread or a simple salad

🔄 Variations:

  • Add sautéed mushrooms, spinach, or sun-dried tomatoes to the sauce.

  • Use fettuccine or penne instead of linguine.

  • Substitute shrimp for the chicken for a seafood twist.
