Ah, the No-Bake Chocolate Éclair Cake — a dreamy, easy dessert that tastes like the classic pastry but without any baking! Layers of graham crackers, creamy vanilla pudding, and rich chocolate topping make this a crowd-pleaser.


🍫 No-Bake Chocolate Éclair Cake

🕒 Total Time: ~4 hours (mostly chilling)

Servings: 8–10


🧾 Ingredients:

  • 2 (3.4 oz) boxes instant vanilla pudding mix

  • 3 cups cold milk

  • 1 (8 oz) tub cool whip (or whipped topping), thawed

  • 1 (14 oz) box graham crackers

  • 1 (16 oz) jar chocolate fudge topping (like Hershey’s or hot fudge sauce)


🔪 Instructions:


🔹 1. Make Pudding Mixture

  • In a large bowl, whisk together instant pudding mix and cold milk until thickened (about 2 minutes).

  • Gently fold in the cool whip until smooth and combined.


🔹 2. Layer the Cake

  • In a 9×13-inch dish, spread a thin layer of pudding mixture on the bottom.

  • Arrange a single layer of graham crackers on top of the pudding. (You can break crackers to fit.)

  • Spread half the pudding mixture evenly over the crackers.

  • Repeat with another layer of graham crackers and the remaining pudding mixture.


🔹 3. Add Chocolate Topping

  • Spread the chocolate fudge topping evenly over the top layer of pudding.


🔹 4. Chill

  • Cover and refrigerate for at least 4 hours or overnight. This softens the crackers and melds the flavors.


🍽️ Serving Tips:

  • Cut into squares and serve chilled.

  • Garnish with fresh berries or a sprinkle of powdered sugar if desired.
