🍤 Shrimp & Sausage Zucchini Squash Skillet

🧾 Ingredients:

  • 1 lb shrimp (peeled and deveined)

  • 12 oz smoked sausage (like andouille or kielbasa), sliced into rounds

  • 2 medium zucchini, sliced into half-moons

  • 2 medium yellow squash, sliced into half-moons

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • ½ teaspoon crushed red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 2 tablespoons fresh parsley, chopped

  • Juice of ½ lemon


🔪 Instructions:


🔹 1. Cook the Sausage

  • Heat olive oil in a large skillet over medium heat.

  • Add sausage slices and cook until browned and slightly crispy, about 5–6 minutes.

  • Remove sausage from skillet and set aside.


🔹 2. Sauté Veggies

  • In the same skillet, add onion and garlic. Sauté for 2–3 minutes until fragrant and translucent.

  • Add zucchini and yellow squash, season with salt, pepper, smoked paprika, and red pepper flakes if using.

  • Cook, stirring occasionally, until squash is tender but still slightly crisp, about 5–7 minutes.


🔹 3. Cook Shrimp

  • Push veggies to the side of the skillet.

  • Add shrimp in a single layer, sprinkle with a pinch of salt and pepper.

  • Cook shrimp for about 2 minutes per side, until pink and opaque.


🔹 4. Combine & Finish

  • Return sausage to the skillet, toss everything together gently.

  • Squeeze lemon juice over the skillet, sprinkle with fresh parsley.

  • Adjust seasoning if needed.


🍽️ Serve:

  • Serve hot as-is or over rice, quinoa, or pasta for a heartier meal.

  • Garnish with extra lemon wedges or chopped herbs.


Tips:

  • Use fresh shrimp for the best flavor or thaw frozen shrimp before cooking.
