Love a good coffee cake — here’s a moist, tender, and tangy Blueberry Sour Cream Coffee Cake with a crunchy cinnamon streusel topping. Perfect for breakfast, brunch, or a cozy snack with coffee or tea!


🫐 Blueberry Sour Cream Coffee Cake

🕒 Total Time: About 1 hour

Servings: 8–10 slices


🧾 Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup sugar

  • ½ cup (1 stick) unsalted butter, softened

  • 1 cup sour cream

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 ½ cups fresh or frozen blueberries (if frozen, don’t thaw)

For the Streusel Topping:

  • ½ cup brown sugar, packed

  • ⅓ cup all-purpose flour

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 4 tablespoons unsalted butter, cold and cut into small pieces


🔪 Instructions:

1. Preheat Oven & Prepare Pan:

  • Preheat oven to 350°F (175°C).

  • Grease and flour a 9-inch springform pan or a 9×9-inch square baking dish.

2. Make the Streusel:

  • In a small bowl, mix brown sugar, flour, cinnamon, and salt.

  • Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs. Set aside.

3. Mix Dry Ingredients for Cake:

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

4. Cream Butter & Sugar:

  • In a large bowl, beat softened butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each.

  • Mix in vanilla extract and sour cream.

5. Combine Wet & Dry:

  • Gradually add dry ingredients to the wet mixture, mixing until just combined.

  • Gently fold in blueberries.

6. Assemble & Bake:

  • Pour batter into prepared pan and smooth the top.

  • Sprinkle streusel evenly over the batter.

  • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool & Serve:

  • Let cake cool in the pan for 15 minutes, then remove the springform ring (if used) or transfer to a wire rack to cool completely.

  • Serve warm or at room temperature.


🍴 Serving Tips:

  • Dust with powdered sugar for extra prettiness.

  • Serve with a dollop of whipped cream or cream cheese frosting (optional).

  • Great with coffee, tea, or a glass of cold milk!
