Cowboy Cookies? Heck yes! Here’s a simple, hearty recipe for those iconic cookies loaded with oats, chocolate, and nuts — perfect for when you want a cookie with some serious bite.


Cowboy Cookies

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 cups old-fashioned rolled oats

  • 1 cup shredded coconut (sweetened or unsweetened)

  • 1 cup chopped walnuts or pecans

  • 1 cup semisweet chocolate chips

  • Optional: 1/2 cup raisins or chopped dried fruit


Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream butter and sugars: In a large bowl, beat softened butter, brown sugar, and granulated sugar until creamy.

  3. Add eggs & vanilla: Beat in eggs one at a time, then stir in vanilla.

  4. Mix dry ingredients: In another bowl, whisk flour, baking soda, and salt.

  5. Combine: Gradually add dry ingredients to wet, mixing just until combined.

  6. Add oats, coconut, nuts, chocolate chips (and raisins if using): Stir to combine.

  7. Scoop dough: Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.

  8. Bake for 10–12 minutes, until edges are golden brown but centers still soft.

  9. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
