  • 1.5 lbs (700g) boneless, skinless chicken thighs or breasts

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 bay leaf

  • Salt & pepper, to taste

  • 1/4 cup tomato paste

  • 1 tbsp Worcestershire sauce (optional, adds depth)

  • 4 cups low-sodium chicken broth

  • 2 tbsp cornstarch + 2 tbsp cold water (for thickening, optional)

  • 1–2 tbsp olive oil (for searing, optional)

Sear the chicken in a pan with a bit of olive oil for 2–3 minutes per side. Not required, but adds flavor.

1. Add to Slow Cooker:

Place the chicken, carrots, potatoes, celery, onion, garlic, herbs, tomato paste, Worcestershire sauce, and chicken broth into your slow cooker.
