Here’s a simple and classic Egg Salad Sandwich recipe that’s creamy, delicious, and perfect for lunch or a light snack. This easy recipe uses hard-boiled eggs, mayo, mustard, and seasonings to make a satisfying filling for your sandwich.

Egg Salad Sandwich Recipe

Ingredients:

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon chopped fresh dill (optional, or 1 teaspoon dried dill)
  • 1 tablespoon chopped fresh chives (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon paprika (optional, for garnish)
  • 4 slices of bread (white, whole wheat, or your choice)
  • Lettuce leaves (optional, for extra crunch)
  • Tomato slices (optional, for added freshness)

Instructions:

1. Boil the Eggs:

  • Place the eggs in a medium saucepan and cover them with water by about 1 inch. Bring the water to a boil over medium-high heat.
  • Once the water reaches a boil, reduce the heat to low and let the eggs simmer for 9-12 minutes. This ensures that the eggs are hard-boiled but not overcooked.
  • After the eggs are done, remove them from the pot and place them in a bowl of ice water to cool for about 5 minutes. This helps make peeling easier.

2. Prepare the Egg Salad Filling:

  • Peel the cooled eggs and chop them into small pieces. You can chop them finely or leave them a bit chunkier, depending on your preference.
  • In a medium mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, chopped dill, and chives. Stir everything together until well combined. Season with salt and pepper to taste.

3. Assemble the Sandwich:

  • Toast the bread slices lightly if you like your sandwich with a bit of crunch, or use them fresh.
  • Spread a generous amount of egg salad on one slice of bread. If desired, add a layer of lettuce leaves and tomato slices for added freshness and crunch.
  • Top with the other slice of bread to form the sandwich.

4. Serve:

  • Slice the sandwich in half (diagonal or straight, your choice) and serve immediately.

Optional Add-ins:

  • Crispy bacon: For added flavor, crumble some crispy bacon into the egg salad.
  • Pickles or relish: If you like a bit of tang, add some chopped pickles or a teaspoon of pickle relish to the egg salad mixture.
  • Avocado: Add slices of avocado for a creamy texture and extra richness.
