🍗 Cajun Chicken and Broccoli Alfredo

📝 Ingredients

For the Chicken:

  • 2 large chicken breasts, sliced thin

  • 1–2 tbsp Cajun seasoning (store-bought or homemade)

  • 1 tbsp olive oil or butter

For the Alfredo Sauce:

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1½ cups heavy cream

  • 1 cup grated Parmesan cheese (freshly grated is best)

  • Salt and pepper, to taste

  • Optional: pinch of cayenne or crushed red pepper for heat

Pasta & Veggies:

  • 12 oz fettuccine or penne

  • 2 cups broccoli florets (fresh or frozen)

  • Optional garnish: chopped parsley, extra Parmesan

👩‍🍳 Instructions

1. Cook Pasta and Broccoli:

  • Boil pasta in salted water according to package instructions.

  • In the last 2–3 minutes of cooking, add broccoli to the same pot.

  • Drain and set aside.

2. Cook the Cajun Chicken:

  • Season chicken slices with Cajun seasoning on both sides.

  • Heat oil in a large skillet over medium-high heat.

  • Sear chicken 3–4 minutes per side until browned and cooked through.

  • Remove and set aside. Slice into strips or bite-size pieces if not already.

3. Make the Alfredo Sauce:

  • In the same skillet, reduce heat to medium. Add butter and garlic; sauté for 1 minute.

  • Pour in heavy cream. Simmer for 2–3 minutes until slightly thickened.

  • Stir in Parmesan cheese until melted and smooth.

  • Season with salt, pepper, and more Cajun seasoning if desired.

4. Combine Everything:

  • Add pasta and broccoli to the skillet. Toss to coat in the sauce.

  • Add the sliced Cajun chicken on top or mix in.

  • Let everything warm through for 1–2 minutes.

🍽️ Serve Hot

  • Garnish with parsley and more Parmesan.

  • Serve with garlic bread or a crisp green salad.

🔥 Tips & Variations

  • Protein Swap: Use shrimp or andouille sausage instead of chicken.

  • Lighter Sauce: Use half-and-half or whole milk instead of cream (sauce will be thinner).

  • Low-Carb Option: Serve over zucchini noodles or cauliflower rice.
