🧾 Ingredients (Serves 4–6)

For the beef & gravy:

  • 2–2.5 lbs beef chuck roast or stew meat, cut into chunks

  • Salt & black pepper

  • 2 tbsp olive oil or butter

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 tbsp flour (for thickening)

  • 2 cups beef broth (low sodium)

  • 1 tbsp Worcestershire sauce

  • 1 tsp onion powder

  • 1 tsp dried thyme (or a few sprigs fresh)

  • 1 bay leaf

  • Optional: 1 tbsp tomato paste (adds depth)

  • Optional: 1/2 cup red wine (for richer flavor)

For the mashed potatoes:

  • 2.5–3 lbs Yukon Gold or Russet potatoes, peeled and cubed

  • 1/2–3/4 cup whole milk or heavy cream (warmed)

  • 1/4 cup butter

  • Salt & pepper to taste

  • Optional: sour cream or cream cheese for extra creaminess


🍳 Instructions:

1. Sear the Beef

  • Season beef chunks generously with salt & pepper.

  • In a large Dutch oven or skillet, heat oil over medium-high heat.

  • Sear beef in batches until browned on all sides. Don’t overcrowd the pan.

  • Set browned beef aside.

2. SautΓ© & Deglaze

  • In the same pan, add diced onion and cook until soft (4–5 min).

  • Add garlic and cook 1 minute.

  • Stir in flour and cook for 1 minute more.

  • Deglaze with wine (if using), scraping up brown bits from the bottom.

3. Make the Gravy

  • Add beef broth, Worcestershire sauce, thyme, onion powder, and bay leaf.

  • Return beef to the pot.

  • Bring to a simmer, cover, and cook on low heat for 2–2.5 hours, until beef is fork-tender.

    • Or transfer to oven at 300Β°F for same time.

    • Or use a slow cooker on low for 8 hours or high for 4–5.

4. Mash the Potatoes

  • While beef cooks, boil potatoes in salted water until tender (15–20 min).

  • Drain well, then mash with butter, warm milk/cream, salt, and pepper.

  • Optional: add sour cream or garlic powder for extra flavor.

5. Finish the Gravy

  • When beef is done, remove bay leaf and thyme sprigs.

  • If the gravy is too thin, mix 1 tbsp cornstarch with 1 tbsp cold water and stir it in, simmering until thickened.

  • Taste and adjust seasoning.
