Here’s a cozy, creamy, and super easy Crockpot Chicken Pot Pie recipe โ€” all the comfort of a classic pot pie, but made in your slow cooker with minimal effort!


๐Ÿ” Crockpot Chicken Pot Pie

๐Ÿ•’ Cook Time:

  • Prep: 10 minutes

  • Cook: 6โ€“8 hours (low) or 3โ€“4 hours (high)


๐Ÿงพ Ingredients:

For the filling:

  • 1.5 to 2 lbs boneless skinless chicken breasts (or thighs)

  • 3 cups frozen mixed vegetables (peas, carrots, corn, green beans)

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1 can (10.5 oz) cream of chicken soup (or mushroom/celery for variation)

  • 1 cup chicken broth

  • 1/2 cup heavy cream or half-and-half

  • 1 tsp dried thyme

  • 1/2 tsp dried parsley

  • 1/2 tsp black pepper

  • Salt to taste

To thicken:

  • 2 tbsp cornstarch + 2 tbsp water (optional)

For topping (choose one):

  • Refrigerated biscuits (baked separately)

  • Puff pastry squares (baked separately)

  • Homemade biscuit dough

  • Crescent rolls (baked)

  • Pre-made pie crust (optional for baked finish)


๐Ÿ‘ฉโ€๐Ÿณ Instructions:

1. Assemble in Crockpot

Add the following to your slow cooker:

  • Chicken (whole pieces)

  • Diced onion & garlic

  • Frozen veggies

  • Cream of chicken soup

  • Chicken broth

  • Thyme, parsley, pepper

Do not add the cream or dairy yet โ€” it goes in at the end to avoid curdling.

2. Cook

  • Cover and cook on low for 6โ€“8 hours or high for 3โ€“4 hours, until chicken is fully cooked and shreds easily.

3. Shred Chicken

  • Remove the chicken, shred with two forks, then return to the slow cooker.

4. Add Cream + Thicken

  • Stir in the heavy cream or half-and-half.

  • If mixture is too thin, mix 2 tbsp cornstarch + 2 tbsp cold water in a small bowl, then stir into the crockpot.

  • Let cook for another 15โ€“30 minutes on high to thicken.

5. Bake Your Topping

  • While the filling finishes, bake your biscuits/pastry topping according to package or recipe directions.

  • Optional: Brush with butter or egg wash for a golden top.

6. Serve

  • Spoon the creamy chicken pot pie filling into bowls and top with a warm biscuit, pastry square, or crust piece.

  • Want more veggies? Add chopped potatoes or mushrooms at the beginning.

  • For extra flavor, sautรฉ onion & garlic in a bit of butter before adding to the crockpot.

  • Add a splash of white wine or a dash of Dijon mustard for a gourmet twist.
