Here’s a classic, comforting Mama’s Crock Pot Beef Roast recipe — tender, juicy, and full of old-fashioned flavor. This is the kind of slow-cooked roast that fills your home with that “Sunday dinner at Mama’s” aroma all day long.

📝 Ingredients:

Main:

  • 3 to 4 lb chuck roast (well-marbled is best)

  • 1 tbsp olive oil (for searing)

  • Salt and black pepper, to taste

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 packet dry onion soup mix (or beefy onion flavor)

  • 4 cloves garlic, smashed

  • 1 large onion, sliced

  • 4 carrots, peeled and cut into chunks

  • 4–5 Yukon gold potatoes, halved or quartered

  • 2 cups beef broth (low-sodium preferred)

  • 2 tbsp Worcestershire sauce

  • 2 sprigs fresh rosemary (or 1 tsp dried)

  • 3 sprigs fresh thyme (or ½ tsp dried)

  • 1 bay leaf


🔪 Instructions:

1. Prep and Sear the Roast (optional but recommended):

  • Pat the roast dry and season all sides generously with salt, pepper, garlic powder, and onion powder.

  • In a large skillet, heat olive oil over medium-high heat. Sear the roast for 2–3 minutes per side until browned.

  • Transfer roast to your crock pot.

2. Build the Crock Pot:

  • Scatter the onions, garlic, carrots, and potatoes around the roast.

  • Pour in the beef broth and Worcestershire sauce.

  • Sprinkle the dry onion soup mix over everything.

  • Add rosemary, thyme, and bay leaf.

3. Slow Cook:

  • Cover and cook on LOW for 8–10 hours or on HIGH for 4–6 hours — until the meat is fork-tender and the vegetables are soft.

4. Optional – Make a Gravy:

  • Remove the roast and veggies, cover to keep warm.

  • Strain the cooking liquid into a saucepan.

  • Simmer and whisk in a slurry of 2 tbsp cornstarch + 2 tbsp cold water to thicken into a gravy.

5. Serve:

  • Shred or slice the roast. Plate with carrots and potatoes, then ladle gravy over the top.

  • Serve with warm rolls or cornbread for a full Southern-style meal.

  • Add celery or mushrooms for extra flavor.

  • If your roast is too lean, toss in a tablespoon of butter to keep it moist.
