Snowy Bavarian Bliss Cake

Ooooh, the name Snowy Bavarian Bliss Cake sounds like something straight out of a winter wonderland dream — soft, airy, creamy, and dusted in snow-like sweetness. ✨❄️

While there isn’t a historical dessert exactly called that, I imagine it as a light Bavarian cream-based cake with layers of vanilla sponge, whipped cream, and a snowy topping. So here’s a custom recipe inspired by Bavarian cream + winter aesthetics.


🎂 Snowy Bavarian Bliss Cake

🍰 Components:

  1. Soft vanilla sponge cake

  2. Lush Bavarian cream filling

  3. Whipped cream topping

  4. Shredded coconut or powdered sugar for the “snow”

  5. (Optional: white chocolate curls, sugared cranberries, or edible snowflakes for garnish)


🧁 Ingredients:

For the sponge cake:

  • 4 large eggs, room temp

  • ¾ cup (150g) granulated sugar

  • 1 tsp vanilla extract

  • ¾ cup (95g) all-purpose flour

  • 1 tsp baking powder

  • Pinch of salt

  • 2 tbsp milk

  • 2 tbsp melted butter (optional, for richer texture)

For the Bavarian cream:

  • 1 envelope unflavored gelatin (about 2½ tsp)

  • ¼ cup cold milk (for blooming gelatin)

  • 1½ cups whole milk

  • 4 egg yolks

  • ½ cup sugar

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream, cold

For the topping:

  • 1 cup heavy cream

  • 2 tbsp powdered sugar

  • ½ tsp vanilla extract

  • ¼ cup shredded coconut or extra powdered sugar for snow effect


🧑‍🍳 Instructions:

1. Make the sponge cake:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.

  2. Beat eggs and sugar with a mixer on high for 5–7 minutes until thick and pale.

  3. Stir in vanilla.

  4. Gently fold in sifted flour, salt, and baking powder. Add milk and melted butter last, folding gently.

  5. Divide between pans and bake 20–25 mins until golden and springy.

  6. Cool completely.


2. Prepare Bavarian cream:

  1. In a small bowl, sprinkle gelatin over cold milk. Let bloom 5–10 mins.

  2. In a saucepan, whisk together egg yolks, sugar, and whole milk.

  3. Heat over medium-low, stirring constantly, until mixture thickens slightly (do not boil — about 170°F).

  4. Remove from heat and stir in bloomed gelatin until dissolved.

  5. Let cool to room temp, then fold in whipped cream (whip 1 cup heavy cream to soft peaks before folding).

  6. Chill until slightly thickened but still spreadable (30–60 mins in fridge).


3. Assemble the cake:

  1. Place first sponge layer on serving plate. Spread with thick layer of Bavarian cream.

  2. Add second sponge layer on top. Chill cake for at least 2 hours to firm up.


4. Whip the topping:

  1. Whip 1 cup cream with powdered sugar and vanilla until soft peaks form.

  2. Frost the top and sides of the chilled cake with whipped cream.


5. Decorate:

  • Sprinkle shredded coconut and/or powdered sugar generously over the top to create the “snowy” look.

  • Optional: Add white chocolate curls, sugared cranberries, or edible glitter/snowflakes for a festive finish.


❄️ Serving Tip:

Serve chilled for the best texture — like biting into a snow cloud. Perfect with coffee, spiced tea, or eggnog.
