🍎 Ingredients:

For the cake:

  • 3–4 medium apples (firm, tart ones like Granny Smith or Honeycrisp)

  • 1 tbsp lemon juice (to keep apples from browning)

  • 1 ½ cups (180g) all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground cardamom (optional but traditional and amazing)

  • ½ cup (1 stick / 113g) unsalted butter, softened

  • ¾ cup (150g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup (120ml) milk or cream

Topping:

  • 1 tbsp sugar (white or turbinado)

  • ½ tsp cinnamon

  • Optional: sliced almonds or chopped hazelnuts for crunch


🧑‍🍳 Instructions:

1. Preheat oven:

To 350°F (175°C). Grease and flour a 9-inch springform pan or round cake pan.

2. Prepare the apples:

  • Peel, core, and thinly slice the apples.

  • Toss in a bowl with lemon juice and a teaspoon of sugar + cinnamon. Set aside.

3. Mix the dry ingredients:

Whisk together flour, baking powder, salt, cinnamon, and cardamom in a bowl.

4. Make the batter:

  • In a large bowl, cream the butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each.

  • Mix in vanilla.

  • Alternate adding the dry ingredients and milk, mixing until just combined.

5. Assemble the cake:

  • Pour batter into prepared pan and smooth the top.

  • Arrange apple slices in a spiral or rustic pattern on top, gently pressing them into the batter.

  • Sprinkle with the topping sugar/cinnamon mixture (and nuts, if using).

6. Bake:

Bake for 40–50 minutes, or until golden and a toothpick inserted in the center comes out clean. If the top browns too fast, tent lightly with foil.

7. Cool and serve:

Let cool in the pan for 10–15 minutes, then remove from pan and cool completely.
