Ingredients:

  • 1 lb fresh spinach (or 2-3 packages of frozen spinach, thawed and drained)
  • 2 tablespoons butter (or olive oil for a dairy-free version)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream (or coconut milk for a dairy-free option)
  • 1/4 cup cream cheese (or dairy-free cream cheese)
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional, for extra depth of flavor)
  • 1/2 cup shredded mozzarella cheese (optional, for topping)
  • 1/4 cup breadcrumbs (optional, for topping)
  • Fresh parsley or thyme (optional, for garnish)

Instructions:

  1. Prepare the Spinach:
    • If using fresh spinach: Rinse and remove tough stems. In a large pot, cook the spinach in batches over medium heat until wilted (about 2-3 minutes). Drain the spinach in a colander, pressing out excess moisture. Chop roughly and set aside.
    • If using frozen spinach: Thaw and drain the spinach thoroughly, squeezing out excess liquid.
  2. Make the Creamy Sauce:
    • In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
    • Add the garlic and cook for an additional 30 seconds until fragrant.
    • Stir in the heavy cream, cream cheese, Parmesan cheese, salt, pepper, and nutmeg (if using). Cook over medium heat, stirring occasionally, until the mixture is smooth and creamy.
  3. Combine Spinach with Sauce:
    • Add the chopped spinach to the skillet with the creamy mixture and stir well to combine. Let it cook for another 2-3 minutes to heat through and allow the flavors to meld.
  4. Transfer to Baking Dish:
    • Preheat your oven to 375°F (190°C). Grease a small baking dish (about 9×9 inches) with butter or cooking spray.
    • Transfer the creamed spinach mixture into the baking dish and spread it out evenly.
  5. Add Toppings:
    • If desired, sprinkle shredded mozzarella cheese and breadcrumbs over the top for a golden, crispy finish.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and golden brown. You can also broil the top for an additional 2-3 minutes for extra crispiness (keep an eye on it so it doesn’t burn).
  7. Serve:
    • Remove from the oven and garnish with fresh parsley or thyme if desired. Serve immediately as a side dish.

  • Make Ahead: You can prepare the creamed spinach up to a day in advance and refrigerate it before baking. Just bake it when you’re ready to serve.
  • For a Lighter Version: Use half-and-half or a plant-based cream instead of heavy cream, and skip the cream cheese for a lighter, dairy-free option.
