Cowboy Meatloaf and Potato Casserole

Ingredients:

For the Meatloaf:
  • 1 lb ground beef (you can mix in some ground pork or turkey for added flavor)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp BBQ sauce (optional for added flavor)
  • 1 tsp dried thyme or oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
For the Potato Casserole:
  • 4-5 medium russet potatoes, peeled and thinly sliced
  • 1/2 cup heavy cream or milk
  • 1/4 cup sour cream (optional, for extra creaminess)
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp butter (for greasing)
  • 1/2 cup cooked bacon bits (optional, for extra flavor)
  • Chopped green onions for garnish (optional)

Directions:

Make the Meatloaf:

  1. Preheat your oven: Preheat the oven to 375°F (190°C).
  2. Prepare the meatloaf mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, BBQ sauce (if using), thyme, paprika, salt, and pepper. Mix until just combined—don’t overwork the meat or it can become tough.
    • If you’re adding cheese to the meatloaf, mix in the shredded cheddar.
  3. Shape the meatloaf:
    • Form the meat mixture into a loaf shape and place it in the center of a greased 9×13-inch baking dish. Set aside.

Make the Potato Casserole:

  1. Layer the potatoes:
    • In a large bowl, toss the thinly sliced potatoes with the heavy cream or milk, sour cream (if using), garlic powder, salt, and pepper. Make sure the potatoes are evenly coated.
  2. Assemble the casserole:
    • Carefully layer the potato mixture around the meatloaf in the baking dish, spreading it evenly. You can tuck some of the potatoes underneath the meatloaf for a neat presentation.
  3. Add cheese:
    • Sprinkle the shredded cheddar cheese over the top of the potatoes and meatloaf. If you’re using bacon bits, sprinkle them on top as well.
  4. Bake:
    • Bake the meatloaf and potato casserole for 60-70 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and the potatoes are tender.
    • If the top starts to brown too much before the meatloaf is cooked through, cover the dish loosely with aluminum foil for the remainder of the baking time.

Finish and Serve:

  1. Rest the meatloaf: Once done, let the meatloaf rest for 10 minutes before slicing.
  2. Garnish and serve: Sprinkle chopped green onions over the casserole for a fresh, vibrant touch, and serve hot.

Optional Add-ins/Variations:

  • Add vegetables: You can add veggies like bell peppers, mushrooms, or spinach to the meatloaf mixture for extra flavor.
  • Spicy kick: If you like a little heat, mix in some chopped jalapeños or a dash of hot sauce in both the meatloaf and potato casserole.
  • Bacon: Crumbled cooked bacon or even sausage can be added to either the meatloaf or the potato casserole for extra flavor and richness.
