Ingredients:

  • 6 large eggs

  • 4 slices of your favorite bread (white, whole wheat, or sourdough work well)
  • 1-2 leaves of lettuce (optional, for extra crunch)
  • Fresh herbs (optional, like parsley or dill, for garnish)

Directions:

1. Boil the eggs:

  • Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
  • Once the water is boiling, reduce the heat to low and simmer for 9-12 minutes, depending on how firm you like your eggs.
  • After cooking, transfer the eggs to a bowl of ice water or run them under cold water to cool them down quickly.

2. Prepare the egg salad mixture:

  • Once the eggs are cool, peel them and chop them into small, bite-sized pieces.
  • In a medium bowl, combine the chopped eggs, mayonnaise, Dijon mustard (if using), relish (optional), and lemon juice (optional).
