Tzatziki Chicken Salad Recipe

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 cup Greek yogurt (for the tzatziki dressing)
  • 1/2 cucumber, finely diced (seeds removed if preferred)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup red onion, finely diced (optional)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 cups mixed greens (like arugula, spinach, or romaine lettuce)
  • 1/4 cup crumbled feta cheese (optional, for extra flavor)

Directions:

1. Prepare the tzatziki dressing:

  • In a small bowl, combine the Greek yogurt, finely diced cucumber, minced garlic, fresh dill, lemon juice, olive oil, salt, and pepper. Mix everything together until smooth and well combined. Taste and adjust seasoning as needed.

2. Prepare the chicken:

  • If you haven’t already, cook the chicken breast by grilling, baking, or pan-searing. Shred or dice it into bite-sized pieces once it’s cooked and cooled.

3. Assemble the salad:

  • In a large bowl, combine the shredded or diced chicken, red onion (if using), and cherry tomatoes (optional).
  • Add the tzatziki dressing to the chicken mixture and toss until everything is evenly coated.

4. Serve:

5. Chill (optional):
