Classic British Sausage Rolls are a beloved savory pastry, made with a filling of seasoned sausage meat wrapped in golden, flaky puff pastry. They’re perfect for picnics, parties, or as a delicious snack. Here’s an easy recipe to make Classic British Sausage Rolls at home:

Classic British Sausage Rolls Recipe

Ingredients:

  • 1 lb (450g) sausage meat (you can use your favorite sausage, removed from the casing)
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 small onion, finely chopped (optional, for added flavor)
  • 1 teaspoon dried sage or thyme (optional)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon Worcestershire sauce (optional)

Directions:

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper to prevent sticking.
  2. Prepare the sausage filling:
    • In a mixing bowl, combine the sausage meat with the finely chopped onion (if using), dried sage or thyme, salt, and pepper. You can also add a little Dijon mustard and Worcestershire sauce for extra flavor, but this is optional.
    • Mix everything together with your hands or a spoon until well combined.
  3. Roll out the pastry:
    • If using store-bought puff pastry, roll it out on a lightly floured surface to a thickness of about 1/8 inch (3mm).
    • Cut the pastry into two long rectangles (roughly 4 inches wide and as long as your baking tray).
  4. Shape the sausage rolls:
    • Divide the sausage mixture in half. Roll each half of the sausage mixture into a log shape, roughly the same length as the pastry rectangles.
    • Place the sausage log in the center of each rectangle of pastry.
  5. Wrap the pastry:
    • Carefully fold the pastry over the sausage filling, sealing the edges by pinching them together. You can use a fork to crimp the edges if you like.
    • Make sure the seam is on the bottom to keep the roll sealed while baking.
  6. Cut and brush:
    • Cut each roll into 4-6 smaller pieces, depending on how large you want your sausage rolls.
    • Brush the tops of the sausage rolls with the beaten egg to give them a golden, glossy finish.
  7. Bake:
    • Place the sausage rolls on the prepared baking tray and bake in the preheated oven for about 25-30 minutes, or until the pastry is golden and puffed up, and the sausage filling is cooked through.
  8. Serve:
    • Let the sausage rolls cool slightly before serving. They can be enjoyed warm or at room temperature.

Tips:

  • Sausage selection: Choose a good-quality sausage that you enjoy the flavor of. You can also experiment with different sausages, such as spicy Italian or herby pork, for unique flavor variations.
  • Add-ins: Feel free to add grated cheese, finely chopped herbs, or a bit of apple to the sausage mixture for extra depth of flavor.
  • Freezing: You can freeze unbaked sausage rolls. To bake from frozen, just add a few extra minutes to the cooking time, and brush them with egg wash before baking.
