Super Creamy Apple Pie Cake Recipe

Ingredients:

For the Cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
For the Apple Filling:
  • 4 large apples (Granny Smith or Honeycrisp work well), peeled, cored, and sliced thinly
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
For the Creamy Layer:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
For the Crumble Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup unsalted butter, chilled and cubed

Directions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.
  2. Prepare the apple filling:
    • In a medium bowl, combine the sliced apples, granulated sugar, cinnamon, lemon juice, and flour. Toss to coat the apples evenly. Set aside while you prepare the other layers.
  3. Make the cake batter:
    • In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
    • In another bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
    • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients, alternating with the milk, mixing until just combined (don’t overmix).
  4. Prepare the creamy layer:
    • In a separate bowl, beat the softened cream cheese and powdered sugar until smooth. Add the sour cream (or Greek yogurt) and vanilla extract, and beat until creamy and smooth.
  5. Assemble the cake:
    • Spread half of the cake batter into the prepared pan, smoothing it out evenly.
    • Carefully spread the cream cheese mixture over the cake batter.
    • Arrange the apple slices on top of the cream cheese layer, pressing them down gently.
  6. Make the crumble topping:
    • In a small bowl, combine the flour, oats, brown sugar, and cinnamon. Add the chilled butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
    • Sprinkle the crumble topping evenly over the apples.
  7. Bake the cake:
    • Bake for 45-55 minutes, or until the top is golden brown, the edges are set, and a toothpick inserted into the center comes out clean (with a few crumbs).
  8. Cool and serve:
    • Let the cake cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely. Slice and serve!

  • Apple Variety: Granny Smith apples are tart, while Honeycrisp apples are sweet and juicy. Feel free to mix and match for a balanced flavor.
  • Storage: Store any leftover cake in an airtight container in the fridge for up to 3-4 days.
  • Make ahead: You can prepare the apple filling and the creamy layer the night before and store them separately in the fridge, then assemble the cake the next day for a quicker prep.
