🍗 One-Pan Garlic Herb Chicken with Potatoes & Green Beans

🧾 Ingredients

  • 4 boneless, skin-on chicken thighs (or breasts if preferred)

  • 1 lb baby potatoes, halved

  • 8 oz green beans, trimmed

  • 4 cloves garlic, minced

  • 3 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp dried oregano

  • 1 tsp paprika

  • Salt & black pepper, to taste

  • 1 lemon, sliced (optional)

  • Fresh parsley or thyme for garnish


👩‍🍳 Instructions

  1. Preheat oven to 425°F (220°C).

  2. Prepare the potatoes: Toss halved baby potatoes with 1½ tbsp olive oil, ½ tsp thyme, ½ tsp rosemary, salt, and pepper. Spread evenly on a large baking sheet or roasting pan.

  3. Start roasting potatoes: Place in oven for about 15 minutes.

  4. Prepare chicken & green beans: While potatoes roast, rub chicken thighs with remaining olive oil, garlic, paprika, oregano, thyme, rosemary, salt, and pepper.

  5. Add chicken & green beans: Remove baking sheet from oven. Nestle chicken pieces among the potatoes. Toss green beans with a little olive oil, salt, and pepper, and add them to the pan around the chicken and potatoes.

  6. Roast everything: Return to oven and roast for another 20–25 minutes, or until chicken is cooked through (internal temp 165°F), potatoes are tender, and green beans are crisp-tender.

  7. Finish: Optional—add lemon slices on top for last 5 minutes of roasting for bright flavor.

  8. Garnish & serve: Sprinkle fresh parsley or thyme before serving.

  • Add a side of crusty bread or a simple green salad for extra freshness.
