Chicken Salad

Here’s a classic and versatile Chicken Salad recipe — creamy, crunchy, and full of flavor. It’s perfect for sandwiches, wraps, lettuce cups, or serving on its own.


🥗 Classic Chicken Salad

🕒 Total Time: 20 minutes (plus chilling)

🍽️ Servings: 4–6


Ingredients

  • 2½ to 3 cups cooked chicken, chopped or shredded (rotisserie, poached, or leftover roasted)

  • ½ cup mayonnaise (adjust to taste)

  • 1–2 tsp Dijon mustard (optional, adds tang)

  • 1 celery stalk, finely chopped

  • ¼ cup red onion or green onion, finely chopped

  • ¼ cup sweet or dill pickles, chopped (optional)

  • 1–2 tsp lemon juice (or vinegar), to brighten

  • Salt and black pepper, to taste

  • Optional Add-ins:

    • ¼ cup chopped apples or grapes

    • 2 tbsp chopped nuts (pecans, almonds, walnuts)

    • 1 tsp fresh dill, parsley, or tarragon


Instructions

  1. Prepare the Chicken

    • Use shredded or cubed cooked chicken (cooled).

    • Rotisserie chicken works great for quick prep.

  2. Mix the Dressing

    • In a large bowl, combine the mayonnaise, Dijon mustard (if using), lemon juice, salt, and pepper. Mix until smooth.

  3. Add the Mix-ins

    • Add chicken, celery, onions, and any optional ingredients like grapes, nuts, or herbs.

    • Stir until everything is well-coated.

  4. Chill (Optional but Recommended)

    • Cover and refrigerate for at least 30 minutes to let the flavors meld.

  5. Serve

    • Great in sandwiches, wraps, lettuce cups, or scooped onto crackers or a bed of greens.


📝 Tips & Variations

  • Lighten it up: Use half Greek yogurt and half mayo.

  • Make it spicy: Add a pinch of cayenne, chopped jalapeño, or hot sauce.

  • Low-carb idea: Serve in avocado halves or lettuce wraps.
