Baked Apple Fritters are a lighter and healthier twist on the classic fried version. They’re soft and fluffy on the inside with a slight crunch on the outside, loaded with warm, cinnamon-spiced apples. Perfect for breakfast or as a snack! Here’s an easy recipe to make these delicious treats:

Baked Apple Fritters Recipe

Ingredients:

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 tbsp unsalted butter, melted
  • 1 tbsp lemon juice (to toss with apples)

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract
  • Pinch of salt

Directions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the apples:
    • Toss the diced apples with the lemon juice in a small bowl to prevent browning. Set aside.
  3. Make the fritter batter:
    • In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
    • In a separate large bowl, beat the eggs with the milk, sugar, vanilla extract, and melted butter until smooth.
    • Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
    • Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  4. Shape the fritters:
    • Using a spoon or an ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart. You can shape them into rounds or slightly flatten them for a more fritter-like shape.
  5. Bake:
    • Bake for 18-22 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  6. Make the glaze:
    • While the fritters are baking, whisk together the powdered sugar, milk, vanilla extract, and salt in a small bowl to make the glaze. Adjust the consistency with more milk if needed (it should be pourable but not too runny).
  7. Glaze the fritters:
    • Once the fritters are done baking, remove them from the oven and allow them to cool for a few minutes. Drizzle the glaze over the warm fritters for a sweet finishing touch.
  8. Serve:
    • Enjoy the baked apple fritters warm! They’re perfect with a cup of coffee or as a tasty treat any time of day.

Tips:

  • Apple variety: For added sweetness, you can use a sweeter apple variety like Fuji or Gala.
  • Add-ins: Feel free to add a handful of chopped nuts, like walnuts or pecans, to the batter for extra crunch and flavor.
  • Storage: These fritters are best enjoyed fresh, but you can store them in an airtight container at room temperature for up to 2 days. To reheat, just pop them in the microwave for a few seconds or warm them in the oven.
