Chicken and Potato Bake

Here’s a comforting and simple recipe for a Chicken and Potato Bake — a one-dish wonder that’s hearty, flavorful, and easy to customize. Perfect for a cozy family dinner!


🍗 Chicken and Potato Bake

Servings: 4–6

Prep Time: 15 minutes

Cook Time: 50–60 minutes


Ingredients:

  • 4 boneless, skinless chicken breasts or thighs

  • 1½ lbs baby potatoes or russet potatoes, cut into chunks

  • 1 medium onion, sliced

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp Italian seasoning (or mix of thyme, oregano, basil)

  • ½ tsp garlic powder

  • Salt & black pepper to taste

  • 1 cup shredded cheddar or mozzarella cheese (optional)

  • 2 tbsp chopped fresh parsley (optional, for garnish)


Optional Add-ins:

  • 1 bell pepper, sliced

  • 1 zucchini, chopped

  • ½ cup sour cream or cream of chicken soup for a creamy version

  • Crumbled bacon on top (yes please!)


Instructions:

1. Preheat Oven:

  • Preheat your oven to 400°F (200°C).

  • Lightly grease a 9×13-inch baking dish or casserole.


2. Prep the Potatoes:

  • In a large bowl, toss potatoes and onion with 2 tablespoons olive oil, half of the minced garlic, paprika, Italian seasoning, garlic powder, salt, and pepper.

  • Spread evenly in the bottom of the baking dish.


3. Add Chicken:

  • Rub chicken pieces with the remaining olive oil, garlic, and a bit more salt, pepper, and seasoning.

  • Lay chicken on top of the potatoes in the dish.


4. Bake:

  • Cover with foil and bake for 35 minutes.

  • Uncover, sprinkle with cheese if using, and bake another 15–25 minutes, or until chicken is cooked through (165°F / 74°C internal temp) and potatoes are tender.

🔥 Optional: Broil for 2–3 minutes at the end for golden, crispy cheese and edges.


5. Garnish & Serve:

  • Sprinkle with chopped parsley before serving.

  • Serve with a green salad or roasted veggies for a complete meal.


📝 Tips:

  • Want even more flavor? Marinate the chicken in olive oil, lemon juice, and garlic for 1–2 hours before baking.

  • Add a handful of cherry tomatoes in the last 15 minutes for color and sweetness.

  • Make it creamy by mixing the potatoes with a little sour cream or condensed soup before baking.
