🍪 Rice Krispie Chocolate Chip Cookies

Yield: About 24 cookies

Prep Time: 15 minutes

Bake Time: 10–12 minutes


Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup light brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 ¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 ½ cups semi-sweet chocolate chips

  • 2 cups Rice Krispies cereal


Instructions:

1. Preheat Oven:

  • Preheat oven to 350°F (175°C).

  • Line baking sheets with parchment paper.

2. Cream Butter & Sugars:

  • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

3. Add Wet Ingredients:

  • Beat in the eggs one at a time, then add vanilla extract. Mix until smooth.

4. Mix Dry Ingredients:

  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

5. Combine:

  • Gradually add the dry ingredients into the wet mixture.

  • Stir in chocolate chips and gently fold in Rice Krispies. (Try not to crush the cereal too much.)

6. Scoop & Bake:

  • Scoop dough into rounded tablespoons and place on prepared baking sheets, about 2 inches apart.

  • Bake for 10–12 minutes, or until the edges are golden and centers are just set.

7. Cool:

  • Let cookies cool on the pan for 5 minutes before transferring to a wire rack.


📝 Tips:

  • Don’t overmix once you add the flour — it keeps them soft and chewy.

  • Want more texture? Add ½ cup chopped pecans or shredded coconut.

  • Store in an airtight container for up to 5 days, or freeze for later!
