Ingredients:

  • 3 cups (375g) all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup (225g) unsalted butter, softened

  • 2 cups (400g) granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup sour cream or Greek yogurt

  • 1/2 cup fresh orange juice (about 2 oranges)

  • 2 tbsp orange zest (from about 2 oranges)

  • 1 1/2 cups fresh or frozen cranberries (if frozen, do not thaw)

  • 1 tbsp all-purpose flour (to toss with cranberries)


For the Orange Glaze (optional):

  • 1 cup powdered sugar

  • 2-3 tbsp fresh orange juice

  • 1 tsp orange zest


Instructions:

1. Preheat Oven & Prepare Pan:

  • Preheat oven to 325°F (160°C).

  • Grease and flour a 10-inch bundt pan or tube pan (or use a non-stick spray with flour).

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  • Toss cranberries with 1 tbsp flour to coat — this prevents them from sinking.

3. Cream Butter & Sugar:

  • In a large bowl, beat butter and sugar until light and fluffy (about 3-5 minutes).

  • Add eggs one at a time, beating well after each addition.

  • Mix in vanilla extract, orange zest, and orange juice.

4. Combine Wet & Dry:

  • Add dry ingredients alternately with sour cream, beginning and ending with dry ingredients. Mix until just combined.

  • Gently fold in cranberries.

5. Bake:

  • Pour batter into prepared pan, smoothing the top.

  • Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.

  • Let cake cool in pan for 15 minutes, then invert onto a wire rack to cool completely.

6. Make the Glaze (optional):

  • Whisk powdered sugar, orange juice, and zest until smooth.

  • Drizzle over cooled cake.


Tips:

  • Don’t overmix once adding the flour to keep the cake tender.

  • For extra height, make sure your baking powder is fresh!
