🥣 Creamy Chicken and Wild Rice Soup

A warm, comforting soup filled with tender chicken, earthy wild rice, veggies, and a rich, creamy broth — perfect for cooler nights or meal prepping.


Ingredients:

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 small onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp salt (more to taste)

  • 1/2 tsp black pepper

  • 6 cups chicken broth

  • 1 cup uncooked wild rice (or a wild rice blend)

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)

  • 1 cup heavy cream or half-and-half

  • 2 tbsp flour (optional, for thickening)


Instructions:

  1. Sauté the veggies:

    • In a large pot, heat the olive oil and butter over medium heat.

    • Add onion, carrots, and celery. Cook 5–7 minutes until soft.

    • Add garlic, thyme, salt, and pepper. Cook another 1–2 minutes.

  2. Simmer:

    • Add broth and wild rice. Bring to a boil, then reduce heat to a simmer.

    • Cover and cook for 40–45 minutes, or until rice is tender.

  3. Add chicken:

    • Stir in the cooked chicken and simmer another 5 minutes.

  4. Make it creamy:

    • In a small bowl, whisk together cream and flour (if using), then stir into the soup.

    • Simmer uncovered for another 5–10 minutes until slightly thickened.

  5. Taste and serve:

    • Adjust seasoning as needed. Serve warm with crusty bread or a side salad.
