Ingredients:

For the Steak Bites:

  • 1 lb sirloin steak or ribeye steak (cut into bite-sized pieces)

  • 2 tbsp olive oil (for searing)

  • 3 tbsp butter

  • 5-6 cloves garlic, minced

  • 1 tsp fresh rosemary or thyme, chopped (optional)

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)

For the Creamy Mashed Potatoes:

  • 2 lbs Yukon Gold potatoes (or russet potatoes)

  • 1/2 cup unsalted butter

  • 1/2 cup heavy cream (or whole milk for a lighter version)

  • 1/2 cup sour cream (optional, for extra creaminess)

  • Salt and freshly ground black pepper, to taste

  • 2 cloves garlic, minced (optional, for extra flavor)

  • Chives, chopped (for garnish)


Instructions:

For the Creamy Mashed Potatoes:

  1. Cook the Potatoes:

    • Peel and cut the Yukon Gold potatoes into even chunks. Place them in a large pot of salted water.

    • Bring to a boil over medium-high heat. Reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

  2. Mash the Potatoes:

    • Drain the potatoes and return them to the pot. Add the butter, heavy cream, and sour cream (if using).

    • Mash the potatoes with a potato masher or use a hand mixer for extra smoothness.

    • Add minced garlic if you want a garlicky kick and season with salt and pepper to taste. Continue mashing until smooth and creamy.

    • If the potatoes are too thick, add a bit more cream or milk to reach your desired consistency.

  3. Keep Warm:

    • Once the potatoes are done, cover them to keep warm while you cook the steak bites.

  1. Prep the Steak:

    • Cut the steak into bite-sized cubes, about 1-inch pieces. Pat them dry with paper towels to ensure a good sear.

    • Season the steak with salt and pepper on all sides.

  2. Sear the Steak:

  4. Toss the Steak Bites:

    • Return the cooked steak bites to the skillet, tossing them in the garlic butter sauce for 1-2 minutes until they’re well coated and heated through.

  5. Garnish:

    • Garnish with fresh parsley and serve immediately.


Assemble the Dish:

  • Serve the garlic butter steak bites alongside a generous portion of creamy mashed potatoes. You can drizzle some of the garlic butter sauce over the mashed potatoes for extra flavor.

  • Garnish the mashed potatoes with some chopped chives for color and added freshness.

  • Steak Selection: Sirloin, ribeye, or tenderloin work best for this dish. These cuts are tender and flavorful when seared, making them perfect for steak bites.
